Ingredients:

1 1/2 - 2 lb chuck or round roast
fresh minced garlic
sea salt
black pepper
1 - 2 lbs carrots (peeled and cut into chunks)
1 onion (peeled and cubed)
1 can sliced water chestnuts (you can use potato if you
prefer)
1 bottle of your favorite beer
Directions:
  1. Preheat oven to 325

  2. Place the pot roast in a large glass baking dish.

  3. Fill dish with carrots, onions, and water chestnuts (or potatos)

  4. Sprinkle 2 tbsp fresh minced garlic (or 2 tsp garlic powder) over top.

  5. Grind a small amount of sea salt over top (for tenderness and flavor, should amount to about 1/4 - 1/2 tsp total)

  6. Grind black pepper over top (approx 1 - 1 1/2 tsp, to taste)

  7. Poor 1/4 cup of your favorite beer into the pan.

  8. Cover and bake 2 - 3 hrs or until the roast is fully cooked and tender.
