Zucchini in Tomato Sauce
Description:
This dish is vegetarian friendly and makes a great hearty sauce for pastas. It can be served as a side dish or main course. I usually cut the zucchini in half lenghtwise and then into 1 inch pieces, but you could julienne or dice it for use as a sauce.

Ingredients:

2 to 3 medium to large zucchini, washed and cut into 1 inch
pieces (about 2 lbs)
one medium size can tomato sauce (10 or 12 ounce)
fresh basil (10 to 12 average sized leaves, cut up or torn
in pieces)
fresh garlic, chopped (or packed chopped garlic in olive oil
or water)
1/2 tsp sea salt
1 tsp cracked black pepper (divided)
1/2 tsp onion powder (or 1/2 cup diced onion * optional)
olive oil
1 tsp oregano (ground dry is fine)
Directions:
  1. Heat 1 to 2 tbsp olive oil (enough to coat bottom of pan) in medium sauce pan (medium to medium high heat)

  2. Add garlic and cook about 2 minutes (if using fresh diced onion add onion at this stage also)

  3. Add basil and cook one minute or less, until basil wilts

  4. Add zucchini, sea salt, and 1/2 tsp pepper

  5. Continue cooking over medium-high heat, stirring frequently, until zucchini begins to soften

  6. Add tomato sauce, remaining pepper, oregano, and onion powder (more salt and pepper may be added at this point if desired)

  7. Continue cooking until tomato sauce begins to bubble slowly

  8. Reduce heat to simmer and cook 10 mintues.

  9. Serve warm over pasta or as a side dish.

  10. Optional: Top with grated parmesan cheese
