Lime Thyme Tilapia

I usually serve this dish with rice and vegetables, my son likes to add holandaise to the top of his. Tilapia is a nice mild fish, so its a kid pleaser when they may turn up their nose at other fish dishes.

Ingredients:

4 Tilapia filets
fresh garlic (may substitute minced garlic in water or olive
oil)
fresh thyme
black pepper (grinder)
sea salt (grinder)
2 limes
butter (real butter is better for this recipe but you may
substitute margarine)
Directions:
  1. Preheat oven to 350

  2. Butter the bottom of a 9x13 glass baking dish

  3. Place tilapia filets in even layer in baking dish, try not to overlap edges (you may use more than one dish if needed).

  4. Place a pat of butter on top of each filet

  5. crack sea salt and black pepper over each filet

  6. tear off thyme leaves from stems and sprinkle leaves over top of filets

  7. mince fresh garlic and scatter over top of filets

  8. slice one of the limes in thin rounds, removing seeds if any, and place one or two lime slices on each filet

  9. bake uncovered for 20 to 25 min until filets are white and flaky (no longer pink in center)

  10. slice other lime into wedges (for garnish)
