Apart from the time boiling and shelling the eggs this dish only takes 5 minutes, its a great use of boiled eggs (which can be made ahead), excellent for making finger sandwiches for parties, or serve as a salad dish at brunch.

Ingredients:

1 doz. eggs hard boiled and shelled
Mayonaise
Salt
Pepper
Directions:
  1. Chop eggs into 1/2 inch pieces

  2. sprinkle with salt and pepper (to taste, approx 1/2 tsp each, more if you prefer)

  3. add 1/4 cup mayonaise and stir, if mixture is too dry add more mayo 1 tbsp at a time

  4. Serve on bed of lettuce or make into sandwiches

  5. Garnish with dill pickles or relish.
